- 2 15 oz. cans of black beans (Rinsed thoroughly) or 30 oz.
- 2 Tbl extra virgin olive oil
- 1 Tbl sweet onion chopped
- 1 clove of garlic minced
- 1/4 chicken or vegetable stock
- 1/4 cup tomato sauce
- 1/4 tsp cumin
- 1/4 tsp chili powder
- salt & pepper to taste
Prep Time
Sauté onions and garlic in olive oil in a skillet. Cook until translucent and soft. Add beans and stir. Add stock, tomato sauce, cumin, chili powder and salt & pepper. Cook on medium heat for about 15 – 20 minutes. Add more stock to adjust consistency.
